Goat Milk Cheddar Style. So here we have another famous cheese, cheddar, that is usually typically traditionally made of cow milk. Here we've got it made of goat milk. The label describes it as soft and creamy, which is not really a description I would give of most cheddars I've had, and it is pretty soft. I find goat milk, when it's made into an aged-style of cheese, can have kind of, like, a powdery smell. Sadly, it sort of tastes a bit like baby powder. It's really just got a, like, not great texture. What I love about aged goat cheeses is that they can turn a goat milk hater around, they can have that kind of caramelly sweetness, and this doesn't really have that. It just tastes kind of flat. This is not my favorite goat cheddar.
