Sweetheart White Stilton. Okay, this is the ultimate insane flavored cheese. This is white Stilton with chocolate, caramel flavored fudge pieces and dried sweetened cherries. Kind of crumbly, like the apricot one. I've been dreading this cheese all day and weirdly, it's not as, like, frightening as I thought it was gonna be. There's so much stuff in it. The cheese is merely the glue that holds it all together. I think white Stilton is the ideal base for flavoring because it is really very neutral and it is not about the cheese. You don't buy white Stilton without stuff in it. It's not a cheese that's available on its own and it does have this very particular kind of, like, moist, crumbly texture that makes it smearable. So it's almost like is it a spread or is it a piece of cheese? I've never seen this cheese anywhere. Could be a Trader Joe's exclusive, but if you want a sweet spreadable cheese with lots of stuff in it, you've found your perfect sweetheart.
